Ham wrapped Chicken Breasts in a Garlic Sauce

This is my favourite recipe, When I serve it to first time guests they often request it when invited back. It goes together quickly and I serve it over chicken flavoured rice along with a salad a couple of seasonal vegetables.

Caramel Apple Chicken

When we entertain, I love a serving a caramel apple topped Brie. I adapted the recipe to use in a chicken dish. It is easy, flavourful, and company loves it. The saltiness of the bacon, the sweetness of the topping and the crunchiness of apples, pecans and cranberries all work well together. I serve it with a wild rice, pecan and mushroom side dish. Any green salad works well, especially one with a bit of tartness, Balsamic vinegar or Dijon mustard. Citrus is also nice.

Upside Down Chicken Coleslaw Salad

This recipe came to be when a few summers ago, we had more then alot of cabbage in the garden. My family was getting tired of cabbage rolls, fried cabbage and plain coleslaw so, I created this fun healthy dish. Since then, it has been requested by friends and family over and over again.

Easy Chicken Caprese

I wanted to make an entree based on Caprese salad ingredients: bocconcini cheese, tomatoes and fresh basil. This recipe turned out so easy and delicious, I put the dish together in 5 minutes, and then bake it for 40 minutes. Succulent pieces of chicken breast marinated in Asian spices, deep fried to a golden brown and then smothered in an enticing pineapple, red pepper, sweet and sour sauce. Pour the sauce over the chicken balls and serve over fluffy basmati rice. Yummy!
