This slightly sweet-and-sour salsa complements the rich taste of swordfish. Use a tart unripened mango that's firm when pressed and has some green on the peel.
Tender chicken in a nutty sauce is perfect with rice or rice noodles. For extra colour, you can brown the chicken in a little oil first.
Look for 100 per cent cranberry juice, not from concentrate. It is more intensely flavoured, tart and ruby red than cranberry cocktail.
You can use other thin fish fillets for this recipe. Try freshwater fish, such as striped bass, North American tilapia or American channel catfish.
