Push the pork and sweet potatoes gently to one side of the slow cooker, then whisk the flour mixture into the other side. This helps keep the sweet potatoes intact.
This quick meal starts on the stove then bakes in the oven. Baked tortilla chips deliver lots of crunch with less fat than fried corn chips.
Serve with cooked rice, shredded lettuce, sour cream and chopped fresh cilantro, if desired.
