Cindy layers roasted and sautéed vegetables between three highly flavoured quinoa mixtures to create a colourful vegetarian “lasagna.” This dish was invented not only for her oldest daughter (the lone vegetarian in a household of meat lovers), but also so the whole family could enjoy more vegetarian meals.
This bold dressing—which is also great on chicken, halibut or tilapia—gives tofu a burst of flavour that's enhanced on the grill. For a milder flavour, omit the jalapeño.
The star of this salad is halloumi, a traditional Middle Eastern cheese that holds its shape perfectly when grilled. Serve with crusty bread.
All it takes is a tray of artfully arranged veggies and a little creativity to make the prettiest edible Christmas tree around.
