Here's a vegan alternative for the vegetarians at the party. For a nonvegan option, sprinkle with shredded Cheddar cheese for the last couple of minutes on the grill.
Packed with hearty lentils, these tasty tacos are super satisfying. We've used dried green lentils rather than canned because they contain far less sodium and have a better texture.
Omit the yogurt for a vegan soup - a stellar warm-up on a chilly day.
Pack some of this dip with a selection of sliced veggies and your favourite gluten free crackers or flatbreads for a satisfying (and nutritious) lunch or snack. Garnish with chopped fresh cilantro, if desired.
