Lemon & Smoked Salmon Pasta

Fish sauce has a strong taste that mellows slightly as it cooks. If you're not used to it, add it in small quantities, until desired flavour is achieved.
This French style of cooking uses parchment paper packets to steam fish, vegetables or shellfish, locking in the flavours and juices. You can eat right out of the packet.
If your grill has a smoker pan or insert, follow the manufacturer's instructions rather than using the foil packet described below. To give the fish a stronger, more pleasing smoke flavour, we used hickory wood chips.
