Made with sweet peppers and flavoured with Asian soy and hoisin sauce, this stir-fry is an ideal topping over noodles and steamed rice.
A few dollops of light sour cream are all you need to add richness to this dish. Couscous adds texture, but you can substitute with orzo pasta. You'll find sumac, a fruity Middle Eastern spice, in specialty stores and select grocery stores. Replace it with smoked paprika if you can't find any.
If desired, garnish with shavings of Parmesan cheese or drizzle with a touch of extra-virgin olive oil.
While all parts of the dandelion plant are edible, the leaves are always the best. To prepare the greens, trim off root ends, rinse leaves well under cold running water and spin dry.
